Ingredients:
2 medium zucchini, cut and sliced, into quarters and strips
2 tsp olive oil
3 1/2 oz baby carrots cut width wise into halves
2 cups coarsely chopped kale,
1 medium chopped onion,
1 cup V-8 juice or tomato juice
4 cups vegetable broth
1/4 tsp ground sea salt
15 oz drained and rinsed white kidney beans or great northern beans
1/2 cup uncooked rotini
1/4 tsp ground pepper
3/4 grated Parmesan cheese – freshly grated cheese will give good flavor
Preparation:
Take a large size pot, heat oil in it, adding later zucchini, carrots and onion. Until it wilts, sauté the mixture for about 5 minutes, and then add diced tomatoes, broth and beans (white kidney beans or northern beans). Allow it to simmer till carrots get tender, add ground sea salt and black pepper, and stir.
Your soup will be ready, when you pour the above into bowls, and sprinkle grated Parmesan cheese on the soup. This will serve 10 people. Baking powder biscuits will go well with Kale added Minestrone soup, as a compliment.

Children like to have food, which is tasty once they come home from school. But it is the responsibility of the parents to ensure that they do not lose out on their nutrients. Keep a close watch on the cookies as they are getting baked. The cookies should then be placed on the rack once they are cooked.
The cookies should be stored inside an airtight container and they should be preserved at room temperature. A minimum of twenty-six cookies can be made in a single batch and then stored in a container, which is airtight and has a tight fitting lid. This is a snack, which is a hot favorite among children, and this is a welcome meal when they come home tired after school.
